By default the Total theme does a pretty good generating excerpts for the Visual Composer modules, however, depending on how you are creating your pages these automatically generated excerpts may not be 100% ideal. In our live demos we create or posts in a way that allows for good auto excerpts but depending on your needs this may not be the case. Luckily there is a very easy solution already built into WordPress. If you look at the bottom of your post editor there is an “Excerpt” field, this can be used to create manual excerpts for your items and anything you add here will display on the site including html.
